My name's Brett and I'm the 'shacho' of Tsunami. Restaurants are funny places to work in. Everyone seems to either want to own one. We have no idea why. Is toro from the belly? I can't remember. Where I am (U.S. west coast), pre-made sushi is in every grocery store, and it's fine really (well, if you like mayonnaise in your sushi), but every once in a while you just have to have the real thing.
Yes. But the special toro we are getting ('o-toro') looks like the sushi in the picture. It has come off a relitively big fish and more importantly it has been fattened for 6 months so it is really marbled and it tastes great.
It's a pity that supermarket sushi is so filled with mayonnaise when you don't always want it.
